Raisin Puffs

Raisin Puffs don’t sound like they would be a cookie favorite because…well raisins are just not the first thing that comes to mind as the best cookie addition (like what about chocolate or M&Ms?). I will say though that they are quite tasty.

The only thing that took a little time was prepping the raisins by simmering them in water. It didn’t take me nearly 45 minutes to simmer all the water away and I had everything else mixed and ready to go once they were cool. The dough easily formed neat balls and I rolled them in a little sugar. The result was a dense and soft, rather buttery, cookie and the raisins added an almost caramelized sweetness. I would happily make these again.
