Potato Chip Cookies

I couldn’t resist trying this recipe. Similar to the cornflake cookies, the crunch of the potato chips just adds something special.

I had hopes that these cookies would be similar to a compost cookie: a basic chocolate chip cookie recipe with lots of sweet and savory mix-ins. But these are more of a butter cookie, very delicate and almost crumbly, super sweet.

I could imagine rolling these into a log, refrigerating, and then slicing them before baking.

Leaving them on the tray after baking to cool for a few minutes also helped mine hold together.
