No Bake Cookies
No Bake Choc Cookies, Mom (Mae Hartwig)
1 cup sugar
1/4 cup cocoa
1/4 cup milk
1/4 cup margarine room temp
Over med heat bring to boil, stir constantly. Continue to cook 1 1/2 min. Remove from heat.
1/4 cup peanut butter
1/2 tsp vanilla
1 1/2 cup quick oats uncooked (we both used rolled oats)
1/2 cup raisins or 1/2 cup pecans
Stir in peanut butter and vanilla. Add oats/nuts. Drop by tsp onto wax paper. Allow to set.
3 dozen cookies. 66 calories.
We were happy to find this no bake cookie recipe tucked in the recipe box, and it was a recipe that belonged to my great grandmother.
During our bake club video chat, Deanna and I started the recipe so quickly that we both missed the instruction that tells you to cook the milk, butter, and cocoa powder before adding the rest of the ingredients. I am glad to report that even with the dump-it-all-in method these still turned out beautifully.
These have such a tasty outcome for such a simple recipe, they are hard to mess up! You can also customize these according to your preferences. They are already gluten free and egg free. For dairy free, use milk and butter alternatives. You could also use different nut/seed butters here. Let us know if you try them!
