No Bake Butterscotch Bars

I know why Gramma June wrote this recipe down - these are so good. They are so sweet they are almost offensive but with the peanut butter, nuts and coconut, they have some weight to them so you don’t totally float away on a sugar rush. If you’ve ever had special K bars, the flavor will be familiar to you as they were to me - although, maybe these tasted so familiar to me because I’ve probably had them before…it’s possible! They definitely reminded me of my Gramma.

No Bake Butterscotch Bars (Annis Fredrickson)

Beat 2 eggs in saucepan, add 1 cup sugar and 3/4 cup margarine. Boil slowly for 2 minutes. Let cool. Add 2 + 1/2 cup graham cracker crumbs, 1/2 cup shredded coconut, 1/2 cup nutmeats of your choice, and 2 cups miniature marshmallows. Press in 9x13 pan. Top with 1 package butterscotch chips melted with 3 tablespoons peanut butter. Cut bars.

All the kids said ….”mmm YUM!”
