Lazy Daisy Oatmeal Cake

I found an excellent write up about the history of the “Lazy Daisy Cake” - apparently popular in the 1930s as a simple, easy to throw together yellow cake, baked in a 9x9 pan with a broiled brown sugar and coconutty icing. Here is the link to more information: History of Lazy Daisy Cake

I substituted the flour with gluten free flour - if you want to or need to do this I was able to substitute without any issue. This is what I used!

This is a tasty and moist little cake. Easy to make and especially easy to frost as the topping is made then spread over the cake right out of the oven (no waiting for it to cool) and broiled! The oats give it a heavier texture but baked oats are all the rage right now so you should definitely go for it!
