Far East Celery
Far East Celery - from the kitchen on Jean Hansen
Cook 4 cups of celery cut diagonally in small amount of salted water (about 8 minutes)
Mix: Celery, 5-oz can of sliced (drained) water chestnuts, 1 can cream of chicken soup, 1/4 cup of diced pimentos, I can sliced mushrooms. (Note added in later by June: can add 1/2 to 1 cup cooked chicken)
Put mixture in 1 or 1 1/2 quart greased casserole. Cover with mixture of 1/2 cup toasted sliced almonds and 1/2 cup soft dry breadcrumbs (or cracker crumbs) and 2 Tbs butter.
Bake at 350 degrees about 35 minutes.
This can be assembled ahead of time and ready for the oven.
