Angel Food Bars, 1980

1 package one step angel food mix

1 can lemon pie filling

1 cup coconut

Mix all together, beat well and bake in cookie sheet for about 20 min.

Spread thin layer of powdered sugar frosting on while warm

These bars are delightfully simple to make, though sourcing lemon pie filling and an angel food cake mix may be difficult depending on where you shop. Deanna ended up using lemon curd in place of the pie filling and it worked out, but the angel food mix is a must for this recipe.

The recipe didn’t say so, but we set our ovens to the same temperature listed on the box mix. You will notice the batter puffs up while it bakes and then settles down as it cools.

For the powdered sugar frosting, you would be fine to mix some powdered sugar with a splash of milk to make a simple icing to your desired consistency. Pour over the bars while warm.

The texture of these bars was interesting, almost like a chewy cotton candy with lemony cake flavors. Sweet as can be.
