Cider Cup + Pineapple Punch

I picked this one out of the stack of beverage recipes in the recipe box we are currently going though because one of these includes cider! It is fall after all - even though you may not need a recipe for punch that serves 30 right now. You can save this for your next fall festival! It combines cider, orange juice and ginger ale - and I personally love apple and ginger together!

These are suggestions submitted to the newspaper for non-alcoholic punches but it’s not hard to imagine how one might change that if so inclined. Enjoy!

Cider Cup

8 cups apple cider

1 can (9 ounces) frozen orange juice concentrate

1 cup light corn syrup

1 bottle (28 ounces) ginger ale

Combine cider, orange juice concentrate and syrup. Chill at least 3 hours. Just before serving, place ice ring in punch bowl and pour chilled cider mixture into bowl. Gently pour in ginger ale. Garnish with mint. Note: make an ice ring with sliced oranges to float in punch bowl a few days ahead of time. Serves 30 (1/2 cup each)

Pineapple Punch

1 can (46 ounces) pineapple juice

3 cups apricot nectar

1 quart club soda

1 quart pineapple sherbet

Combine pineapple juice with apricot nectar in a large punch bowl. Add club soda and sherbet just before serving. Serves 30 (1/2 cup each).
