Carrot-Pineapple Bread

I “heartily” agree with the author of this recipe. This bread is tasty and hearty and is full of good fiber. It is a bit on the dry side but it holds together well and is not too dry by my measure. It’s also very lightly sweet.

I don’t own small bread loaf pans as the recipe suggests so I used my one large loaf pan and baked it for another 30 minutes than what was recommended.

Try it toasted with a bit of butter or add some nut butter or avocado and maybe an egg - yum!
