Kitchen Sink Coffee Cake

Utilizing leftover canned fruit, you too can make this quick and easy coffee cake. I love the frugality, resourcefulness and creativity that these “Hints from Heloise” bring into the kitchen.

To make you will need:

1 yellow box cake mix

Leftover canned fruit

A little butter, sugar, flour

Make the boxed cake with a little less water than is called for. Mix and pour into your cake pan, add the sliced leftover fruit to the top, then add your butter-sugar-flour crumble mixture and bake.

I can’t wait to give this one a try - if you do, let us know! I love to substitute a little bit of fruit for some of the moisture in recipes. It’s an excellent way to give muffins or sweet breads that extra something.
