Green Bean Parmesan
For bake club this month, we loved the idea of testing a few recipes that may work well for holiday gatherings. This newspaper clipping recipe appeared to be a good one. I’m not sure how common the hard boiled egg topping was during this era, but it was a surprising element that made the dish a bit more satisfying.
The crispy topping is made of bread crumbs and parmesan cheese sautéed in butter. The green beans are warmed in cream of mushroom soup. Sliced hard boiled eggs are served as a garnish.
This dish turned out a bit salty for our taste, and a bit small. I would suggest using an extra can of green beans here to give all those flavors more places to land.
