We tried these at my house and the kids (and myself) loved them. I love a recipe I can prepare before hunger strikes and have on hand.
Pre-cook the potatoes with the skins on - be careful not to cook them for very long because you don’t want mushy hash-browns.
Peel and shred - I used my rotary grater and had the shredding done in no time. It’s truly one of my favorite kitchen gadgets because I hate using a hand grater (I know, strong words but it’s true).
Pack your grated potatoes tightly into the base of a pan lined with foil and wrap them and freeze them (there’s a picture of my frozen potatoes below). Take them out and break off a piece or two whenever you need some fried potatoes with your meal. Pan fry as described above and enjoy!
