Freezing Cheese

A great tip from the kitchen of June Pabst - freeze cheese so you can have cheese and crackers for lunch even when your snowed in.

Do you guys freeze cheese? I do! When you have a chest freezer (or two) and you like to be prepared for the winter….and you come from Mid-West stock…you just gotta have that cheese!

Freezing cheese causes ice crystals to develop and changes the texture of cheese making it more dry, crumbly and mealy. Well aged, hard cheeses and big blocks of uniformly smooth cheddar don’t suffer much in texture after being in the freezer and are good candidates for this reason. The same goes for shredded cheeses that you intend to melt - these tend to do really well in the freezer too!
