Lemon Cheese Bars

Mom’s, Lori Home, 9/8/86

1 Package yellow cake mix (Lemon mix) with pudding in

1 egg and 1/3 c oil

Combine mix, egg, and oil, mix until crumbled.

Reserve 1 cup mixture, Pat remaining in 9x13 pan (ungreased) Bake in 350 oven 15 min.

Meanwhile beat:

8 oz cream cheese, 1/3 c sugar, 1 tsp lemon juice, 1 egg, until light and smooth.

Spread on baked layer, sprinkle with reserved crumb mix. Bake 15 min more. Cut when cool.


Sometimes when I’m on Pinterest or when I see cooking hack videos by tasty.com they include some surprising uses for box cake mixes. I’ve come to realize many of these kitchen hacks, specifically using convenience foods, have been perfected by the domestic goddesses that have come before us.

I haven’t been a regular user of box mixes since I was a teenager, but it is really fun to see what they can do. These lemon bars tasted like something straight out of a Starbucks or Panera bakery case, super sweet and perfectly lemony.

Hazards of bakeclub: while trying to show each other the texture of our mixture, our laptops sometimes get a sampling as well. Lol.
